- What is Spelt?
Spelt is an ancient grain packed with complex carbohydrates, high in
protein and easy to digest (www.PurityFoods.com).
It is one of the oldest grains known to be cultivated by farmers, and
is often used as a wheat substitute because of it's healthful qualities.
Naturally higher than wheat in B complex vitamins, complex carbs
and protein. Spelt is used by some gluten sensitive people in their
diets (www.spelt.com).
- Does Spelt contain gluten?
Yes, but since it's more fragile than gluten found in wheat, it is easier
to digest.
- What is Kamut?
The Kamut brand grain is an ancient relative of durum wheat, with 20-40%
more protein, and higher lipids, amino acids, vitamins and minerals.(www.Kamut.com)
- In the ingredients list on
the package, it says "Kamut brand whole wheat flour". I have
a wheat allergy - can I eat it?
Kamut is NOT common bread wheat (Triticum Vulgare). Most people allergic
to common bread wheat are not allergic to the variety of wheat (Triticum
turgidum spp turanicum) that is the ancient relative of durum wheat,
known as Kamut brand whole wheat.
- I thought I was just buying
a Spelt product, but the ingredients list on the package say it is mixed
with Kamut wheat flour. Why don't you have a pure spelt product?
We aim to make the highest quality product available. When we did manufacturing
trials with Spelt alone, our products crumbled and broke more often.
Due to its higher gluten levels, Kamut makes a good "binder"
or glue if you will, resulting in a better quality cake, flatbread and
breadstick.
